With summer comes the quest for the perfect salad for picnics, barbeques, and trips to the beach. This weekend we plan on hitting the sand with friends and hopefully take in as many rays as possible.  Though I am crossing my fingers for the sun to come out, I can rest assured knowing that even if it doesn’t, we’ll enjoy this delicious watermelon and feta salad.  This is a classic Natalie (me) salad and has always been a crowd pleaser, so I continue making what the people want.  I recommend you start growing basil in your garden like I do; it is always fun to just walk out your door to pluck one of the ingredients.

How To: Watermelon Salad with Feta, Olives, and Basil

6 cups watermelon, cut into cubes (roughly half a small watermelon)
1 1/2 cups Greek feta, rough chopped
1 cup Kalamata olives, pitted and halved
1/4 cup basil leaves, cut chiffonade (tiny thin ribbons)
3 tablespoons olive oil
1 tablespoon balsamic vinegar

Cut and prepare the ingredients for the salad. To mix the vinaigrette, whisk the balsamic into the olive oil until emulsified. 20 – 30 minutes before serving, toss the ingredients together and lightly dress the salad. Serve garnished with basil leaves.

        i have made this salad a few times now for me and my boyfriend. he loves, i love it. i fudge the measurements some, just kinda going by my eye, but it is consistently good. i made my mom try some of the leftovers and she loves it. this is seriously genius.
